Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Caramelize the onions: In a skillet over medium heat, melt the butter and add the sliced onions. Cook, stirring occasionally, for about 20 minutes until the onions are golden brown and caramelized. Add the minced garlic and cook for another minute. Set aside to cool.
- Prepare the meatloaf mixture: In a large bowl, combine the ground beef, breadcrumbs, eggs, Worcestershire sauce, beef broth, thyme, salt, and pepper. Add in the caramelized onions and 1 cup of shredded Gruyère or Swiss cheese. Mix until just combined.
- Shape the meatloaf: Form the mixture into a loaf shape on the prepared baking sheet or press into the loaf pan. Bake for 45-50 minutes.
- Make the French onion topping: While the meatloaf is baking, prepare the sauce. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the beef broth and Worcestershire sauce. Bring to a simmer and cook until thickened.
- Top and finish: Remove the meatloaf from the oven and pour the French onion topping over it. Sprinkle with extra shredded cheese. Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Rest before serving: Let the meatloaf rest for 5-10 minutes before slicing and serving.
Tips for the Best French Onion Meatloaf
- Choose the Right Onion: Yellow onions work best for caramelizing due to their natural sweetness.
- Don’t Rush the Caramelization: The key to deep flavor is taking the time to properly caramelize the onions.
- Add a Broiler Finish: For a golden, bubbly top, you can broil the meatloaf for the last 2-3 minutes.
The French Onion Meatloaf delivers a hearty meal with a touch of sophistication. It pairs perfectly with mashed potatoes, roasted vegetables, or even a fresh green salad for a comforting and flavorful dinner.
